Szechuan Mapo Tofu

Ingredients
1/2 pound ground pork1 pound firm tofu3 green onions2 medium onions chopped3 cloves garlic, sliced thin1 Tbs. Chile paste1 Tbs. Bean paste (optional)1 C. chicken broth1 T corn starch2 Tbs. Water2 Tbs. light soy sauce2 Tbs. cooking sherry1 Tbs. ginger
Directions
1. Cut tofu into 1/2 inch scuare cubes and blanch for 2-3 minutes. Remove from water and drain.
2. Chop green onions into short lengths.
3. Heat wok and add oil. When oil is ready, add onions, garlic and ginger adn stir fry until they begin to brown. Add pork.
4 Stir fry pork until darkens. Add chili paste and bean paste. Stir fry briefly, then add stock and tofu.
5. Turn down heat and cook for 3-4 minutes. And all onions and stir fry for 2-3 minutes.
6. While cooking combine cornstarch, water, soy sauce, sherry. Add to wok and stir fry.
7. Serve with steamed rice.

    about 1 TBS. I actually use spray oil.
