1 package frozen hash brown potatoes1 can cream of chicken soup1 cup sour cream (light)1/4 cup butter (smart balance)2 Tbsp milk (1%)2 cups shrdded cheese(low fat mexican blend)salt & pepperfinely chopped onion (dried minced)French's fried onions
preheat oven to 350. In large bowl combine all ingredients, except fried onions. transfer to lightly sprayed 11x7 pan or similar cassarole dish (can divide into multiple dishes). Cook uncovered for 45 min. Top with fried onions, cook another 5 min.
