Lemon Ginger Scallion Soup

2 cups vegetable broth, chicken broth, or water (if using water, dissolve 1 spoonful of white miso paste for flavor)3 tbsp freshly grated gingerJuice from 1/2 of a lemon2 or 3 small scallions, chopped fine1/2 tsp honey (if needed)
Don't pre-prepare the ingredients for this soup. If you prepare them as it cooks, it gives each ingredient just enough time to heat through.
Heat vegetable broth in a saucepan to hot.
Grate in the ginger.
Squeeze in half a lemon
Chop, then toss in the scallions.
Taste it - if it’s too lemony, you can add the honey.
Also good is a 1/2 tsp of Vietnamese chili garlic sauce for a kick.
