Grandma Leers Sweet Patato Rolls

1 pkg. dry yeast1.5 cups warm water2/3 cup sugar7.5 cups of flour1/2 tsp. salt1/3 cup shortening1 cup warm mashed yams
Dissolve yeast in warm water. Stir in sugar, salt shortening and yams. Stir in about 3 cups of flour. Mix to combine. Then continue adding flour until a nice dough forms. Knead until slightly elastic and the dough springs back when poked. Let raise until doubled. Punch down. Rollout 1/4-1/2" thick and cut dough into triangles and roll into rolls. Allow to rise again before baking. Place on lightly greased baking sheets and bake at 350 degrees until golden. This dough makes great cinnamon roll dough. Recipe can be doubled.
