Bisquick Crustless Spinach Quiche

Ingredients
1 pound frozen spinach4 eggs1 cup Bisquick Heart Healthy2 cups skim milk1/2 med. onion diced3 oz 2% shredded cheddar cheese1 tsp sea salt1/2 tsp each onion and garlic powder2 tbsp olive oil
Directions
Saute the chopped onion with the sea salt in the olive oil until tender. Thaw and drain the frozen spinach-squeeze out all excess liquid. Add spinach to onion and add garlic and onion powders saute for a minute or two to incorporate the flavors then remove from the heat. In a blender, mix all remaining ingredients and blend until mixed well. Spray your dish ( I use a 9 inch pie plate) with cooking spray or butter it but add the extra calories. Spread the spinach mixture in the bottom of your baking dish then pour liquid mixture on top and stir slightly to mix all in. Bake at 325 F for 50-60 minutes, until a knife comes out clean. Be careful not to overcook. Serve room temperature. Great any time of the day especially for brunches. Makes a great quick dinner too if you have leftover quiche.
