Mediterranean Couscous with Roast Veg

Ingredients
100 grams Couscous1 Carrot1 Zucchini (courgette)1 Red Pepper1 Yellow PepperLemon Juice (to taste)1 clove garlic (chopped very small)1 tbsp garlic powder1 tbsp Oregano2 tbsp Parsley2 tbsp Olive Oil
Directions
-Put oven on medium heat
-chop up or slice the vegetables into edible chunks
- in a bowl, put oil, oregano, 1 tbsp parsley, garlic . Add veg and mix up thoroughly.
-put on baking tray and put in oven for about 15mins or until just turning brown
-in another bowl put the couscous and lemon juice, parsley and garlic powder then cover with boiling water (about 1cm above couscous level), cover with a plate and leave for bout 7mins. (try it if its still a little crunchy add a little more water and cover again)
- once veg and couscous is done add together and stir in and voila!

(if you like things spicy add chilli powder to the veg before you put them in the oven)
