1 T. EVOO2 minced garlic cloves2 bunches fresh spinach2 medium sized zucchinis2 medium summer squash1 package firm tofu4 T. parmesean cheeselemon pepper and basil to taste
1. sautee zucchini and squash until soft in EVOO and garlic
2. add spinach and season with lemon pepper as needed
2. slice and layer tofu, zucchini, squash, and spinach
3. top with parmesean cheese
4. bake until tofu is hot (should be about 15 minutes)
