Tuscan White Bean Soup

Ingredients
4 Cups 99% Free Chicken Broth4 cups Great Northern Beans3 - 4 Cups Water3 Cups Fresh Torn Spinach Leaves2 cups Diced Canned Tomatoes in Juice1/2 Cup Diced Fresh Red or Yellow Pepper1/4 cup Chopped Fresh Parsley3 TBSP Chopped Fresh Basil1 TBSP Chopped Fresh Rosemary5 TBSP Chopped Shallots or Onions4 TBSP Red Wine Vinegar
Directions
Saute shallots (or onions) and garlic in olive oil until tender. Add Red pepper and saute 3 more minutes. Add all ingredients except spinach to crock pot and cook on high setting for 3 hours. Add fresh spinach just before serving.
