Family Goulash

Ingredients
1 lb. ground beef 4 oz. flat noodles½-cup chopped onion (may use scallions)2 cups chopped celery½-cup ketchup14½ oz. canned diced tomatoes8-oz. can mushrooms, drainedBlack pepper to tasteSalt: 1 tsp or less—to taste.
Directions
Brown meat in large kettle with onions and celery. When sufficiently browned, add the rest of the ingredients and stir. Turn flame to low and simmer covered for one hour, giving the occasional stir. There is no need to pre-cook the noodles.

Note: My mom's orifginal recipe called for 2 tsp. of salt, but hully gee, was that salty, combined with my canned tomatoes. I would keep it to ½ tsp. of salt!

This is a terrific way to use those tomatoes you canned last fall.

Makes at least 8 ½-cup servings.

    I added 1 small pkg of frozen corn, 1/4 cup of water (after browning, before simmering), 1 chopped green pepper, and a about 1 Tsp of Worcestershire sauce - it's delish!

    I left out the ketchup, used fresh mushrooms instead of canned, and added a can of whole kernel corn. Delish! - 3/7/11

    Did she really call it "Family goulash"? I have yet to ask Mom where she got this recipe, but it was the only kind of hamburger hotdish I would eat as a kid, LOL.
