Ingredients
Quinoa, feta cheese, chicken broth, artichoke hearts, grape tomatoes and green olives (stuffed)
Directions
Cook quinoa in chicken broth until fully cooked. Add chopped olives, tomatoes, artichoke hearts and feta.
Eat hot or chill (i prefer it cold)....it's good either way.

    I added spinach and peppers and omitted the olives due to personal tastes. It was a fabulous, satisfying lunch. I'll definitely make this again. - 6/13/09
