Shrimp ceviche

Ingredients
* Shrimp, cooked, 16 oz * Cilantro, raw, 32 tbsp * Jalapeno Peppers, 3 pepper * Lime Juice, 2 cup * *Tomatoes, red, ripe, raw, year round average, 6 large whole (3" dia) * Cucumber (peeled), 1 large (8-1/4" long) * Onions, raw, 1 large
Directions
dice all veggies except lime and jalapeno. place in bowl. take shrimp with peel still on and boil in water until cooked (will be pink). once shrimp cool peel and dice add to bowl. put 1/2 c of lime juice in blender with jalapenos and blend well (liquid). put in bowl along with the rest o the lime juice. salt then mix together. this can be served on tostadas or with tortilla chips. use as much of the veggies as you want. make it to your liking. crushed red pepper flakes can also be added and the jalapeno amount can be changed to be more or less spicy.
