Lentil Tomato Soup

1 1/2 c. lentils1 large can tomato juice46 oz. water1/2 c. chopped onion2 banana peppers chopped1 green pepper chopped1 can cooked carrots1 pkg frozen spinach1/4 c. dry pearled barley
Mix all ingredients in a large soup pot. Heat on high until soup comes to a boil. Reduce heat to low and continue to simmer for about 2 hours.
Serves 6-8 large bowls.
