tofu sandwich with rice noodles

1 c rice noodles, broken into small pieces 1/3 cup onions2 cloves garlic¼ c yellow pepper, chopped¼ c carrot, chopped1 med tomato chopped2 T cedar shoots in sesame oil2 eggssesame oil2-4 T vegetable stock4 tofu squares.
After heating sesame oil in pan, add onions and garlic and carmelize. Add carrots, cover until carrots have softened, then add yellow pepper and tomato. Cook until soft and all moisture evaporated. Remove from heat.
In the meantime, scramble two eggs, cedar shoots and vegetable stock in separate bowl. Add rice noodles. Split tofu square in half with sharp knife. Brush both sides with cedar shoots in sesame oil, and grill.
When vegetables are finished, combine them with the egg mixture and mix well.
Scoop small portions of egg-noodle-vegetable mixture into a hot omelette pan. The mixture will spread out, so carefully shape it into square the size of tofu. Cook until egg is finished and then carefully turn to cook other side. The patties may fall apart easily, so make they are small, about the size of your turner.
Cut tofu into half and grill. Add smoke if you desire.
Place grilled tofu half on plate, brush with sesame oil and cedar shoots. Then sandwich in rice noodles and build up to three or four layers.
Serve with side of cedar shoots.
Substitute: fresh chopped basil pesto for the cedar shoots.
Verdict: No disappointment. To hold together better, use another egg or thicken with corn starch, or reduce liquid. The taste was delicious.
