Chili Roasted Blackeye Peas

Ingredients
2 cans blackeye peas3 Tablespoons Olive Oil1 1/2 teaspoons chili powder1 teaspoon pepper3/4 teaspoon cumin1/2 teaspoon salt(I like spicy foods, so I added 1 teaspoon of chilpotle chili powder to give it an extra kick!)
Directions
Preheat oven to 425. Mix all ingredients together, and transfer to a lightly greased jelly roll pan. Bake 50 min, stirring every 10 min. Let cool 20 min.
Makes 8 1 oz servings.
