Curried Cauliflower Soup (vegetarian) - 1 cup

*Canola Oil, 1 tbsp (remove)Cauliflower, raw, 1 head, large (6-7" dia) (remove)Apples, fresh, 1 large (3-1/4" dia) (approx 2 per lb (remove)Onions, raw, 1 medium (2-1/2" dia) (remove)Garlic, 2 clove (remove)Curry powder, 1 tbsp (remove)Vegetable Broth, 2 cup (remove)
Heat the olive oil in a large pot and saute the onion until its golden brown and soft. About 5-7 minutes.
Stir in the apple, curry, garlic and cook for 2 more minutes or until the curry powder turns a deep yellow shade.
Add the cauliflower and veggie broth. Add 2 more cups of water. Bring to a simmer and cover.
Reduce heat to medium-low, and simmer for 20 minutes, then blend in a food processor or blender.
