Quinoa & Spinach soup

Ingredients
1 1/4 cups diced red onion3 cups vegetable broth3/4 cup quinoa, rinsed14.5 oz tomatoes with basil, garlic, oregano10 oz spinach leaves
Directions
Coat large saucepan with cooking spray, and heat over medium high. Add onion, saute 5 min or until soft. Stir in broth and 4 cups water, bring to boil. Add quinoa, reduce heat to low. Cover and simmer 15 minutes. Stir in tomatoes and spinach leaves. simmer 5 min uncovered, or until spinach and quinoa are tender.
