Barley Lentil Soup

Ingredients
1 tablespoon extra virgin olive oil1 onion, diced2 garlic cloves, minced1 large carrot, diced1 celery stalk, diced1 teaspoon dried thyme1/4 teaspoon dried marjoram1/4 teaspoon peppersalt4 cups vegetable stock2 cups water1 cup brown lentils or green lentils1/4 cup barley1/4 cup fresh parsley, chopped1/4 cup non-fat, plain yogurt (optional)1 tablespoon fresh parsley, diced (optional garnish)
Directions
Heat oil over medium heat in a large pot. Saute onion, garlic, thyme, carrot, celery, marjoram and pepper until inions are soft, about 5 minutes.

Add stock, water, lentils, and barley and bring to a biol. Reduce heat, cover, and simmer until barley and lentils are tender, approximately 40 minutes.

Stir in chopped parsley, if desired.

May top each serving with a dollop of yogurt. Sprinkle with finely diced parsley.
