Ingredients
1 Green Pepper, chopped fine1 Red Pepper, chopped fine1/2-1 Red Onion, chopped fine1 tsp. Cilantro, chopped fine1 can Pinto Beans, rinsed & drained1 can Shoepeg Corn, rinsed & drained1/4 cup Olive Oil1/3 cup Cider Vinegar1 tsp. Sugar
Directions
Chop veggies and add beans, corn, oil, vinegar & sugar. Refrigerate several hours or overnight. Enjoy! Can be used over seafood or chicken as well!
