Spiced Pumpkin Soup

2 Med Onions, sliced2 Med Carrots, sliced (1 cup)1 Tbsp Cilantro2 Tsp Ginger1/2 Tsp Allspice3 Cloves Garlic, minced2 Tbsp Margarine, low fat14 oz Chicken broth15 oz pumpkin1 Cup Milk
Makes 4 servings (approx 53/4 cups)
1. In a large saucepan cook onions, carrots, cilantro, ginger, allspice and garlic in hot margarine, covered, for 10-12 mins or until vegetables are tender, stirring once or twice.
2. Transfer vegetable mixture to a blender container. Add 1/2 cup of the chicken broth. Cover and blend until nearly smooth.
3. In the same saucepan combine the remaining 1 1/4 cup of broth, the pumpkin and milk. Stir in blended vegetable mixture. Heat through. Enjoy!
