Quinoa Chicken Noodle Vegetable Soup

Ingredients
4 c. chicken stock2 oz quinoa linguine2 14 oz bags frozen mirepoix vegetables1 12.5 oz can chicken breast meat4 c. waterSalt & Pepper to taste
Directions
Break up quinoa linguine into 2" pieces. Cook in stock until almost done (soft). Add veggies, chicken, and water. Add salt and pepper to taste. Simmer on low until quinoa and veggies are done and flavors blend.
