Southern Chicken rice soup

3 pounds chicken breast10 cups water2 t. salt1/2 cup uncooked long grain rice1/2 c. chopped onion1/2 c. chopped carrots1/2 c. chopped celery1/2 c. sliced okra1 14.5 oz. can stewed tomatoes1 T. chopped green chilies1 garlic clove, minced1.5 t. chili powder1 t. salt.5 t. lemon-pepper seasoning.5 t. paprika.5 t. garlic powderpinch of cayenne pepper, thyme, ground cumin
Place chicken, water and salt in a soup kettle. Slowly bring to a boil, skim foam. Reduce heat, cover and simmer for 45-60 minutes or until chicken is tender. Remove chicken. Cool and chop into bite-size pieces. Skim fat from broth. Add rice, vegetables and seasonings. Cook, uncovered, over medium heat for 30 minutes. Add chicken. Simmer for 30 minutes or until vegetables are tender.
