Pasta with Shrimp & Feta

1 T. olive oil1/4 c. chopped yellow onion2 cloves garlic1 yellow bell pepper, coarsely chopped2 15-oz. cans chopped tomatoes1 15-oz. can tomato sauce1/4 c. chopped sun-dried tomatoes1 bunch scallions, chopped1/2 c. chopped fresh Italian parsley1/4 c. chopped fresh oregano1/4 c. chopped fresh basil2 8-oz. blocks light feta cheese, crumbled1 lb. radiatorre1 lb. large shrimp, peeled and deveinedsalt and fresh ground pepper to taste
Makes about 10 servings.
Heat olive oil in a 4-1/2 qt. pot over medium heat. Cook onion, stirring, until softened. Add garlic and pepper and cook, stirring, for a few more minutes. Add tomatoes and tomato sauce and bring to a boil. Reduce heat and simmer for about 30 minutes. Stir in scallions, herbs, salt, pepper, and feta and keep warm.
When the sauce is almost ready, cook the pasta. Boil the shrimp until it just turns pink, drain, and stir into the sauce. Toss sauce with drained pasta and serve.
