Curried cauliflower stew

Ingredients
* Olive Oil, 2 1tsp * Peppers, sweet, red, raw, sliced, .50 cup * bell peppers, .50 cup, strips * Ginger Root, 3 tsp * chicken broth harvest farm, 2.5 cup * Broccoli, fresh, 2.5 cup, chopped * Cauliflower, frozen, cooked, 2.5 cup * Beans, great northern, 2 cup * Cilantro, raw, 6 tbsp * Onions, raw, 1.25 cup, chopped * *Philadelphia Cream Cheese, 2 oz * masman curry paste, 2 tbsp
Directions
saute onion and peppers in olive oil for 10 min stirring until tender and slightly browned over med high heat.

mince and add the ginger and curry paste.. cook 2-3 min, stirring constantly...

add broth, cauliflower, beans and broccoli.. cover and cook for 15-20 min

add cream cheese and cilantro and cook for 5 more minutes and it is ready to serve. this would be great over rice or noodles but them it wouldn't be "beachy". You could substitute non fat yogurt for the cream cheese (I didn't have any) and low sodium broth (I didn't have any)
