Ingredients
1/4 cup flax meal1/4 cup water1 egg white (can use whole egg, also)pinch saltfruit, as desired (I did a handful of strawberries)sweetener, as desired (to keep it low calorie/low carb, I used a bit of stevia). spices, if desired (cinnamon, nutmeg, etc)
Directions
In small saucepan, whisk together flax, water, egg, and salt with fork. Put over medium-high heat and stir occasionally, until the porridge becomes thick and you can see the whites of the egg (this way the egg isn't still un-cooked... ew!) - this should be about 3 or 4 minutes.
While porridge is heating, chop your fruit, if necessary. When porridge has thickened, stir in fruit, sweetener, and any spices you'd like to add. Heat through, then serve!

I know this sounds really strange but it's really good! I was surprised and hopefully you will be, too!

Serves 1, about 3/4 to 1 cup.

This was really good. I used a whole egg. I topped it off with a little almond butter and a few raisins. I will definatley make it again! - 9/2/12

I really liked this recipe. It was quick and delicious. I will leave out the egg next time because it really doesn't need it to still taste great. Thanks for the good eating. - 5/15/13

Great minds think alike! I did the same thing using brown rice that I put in the blender then toasted in a dry saucepan then did the same as above. Great! - 4/15/09

The flavor was good, but it thickened into a dough-like consistency immediately, before heating. I found this texture fairly unpleasant. I might try and make it again with different proportions, but not like this. - 8/15/11
