2 cups brown sugar1 cup vegetable oil1.5 cups cooked, mashed pumpkin2 eggs3 cups flour1 tsp. salt1 tsp. baking powder1 tsp. baking soda1 tsp. vanilla extract1.5 TBSP cinnamon or cinnamon plusFILLING8 oz cream cheese1/2 cup sugar2 cups cool whip
Cream sugar & oil. Add pumpkin and eggs. Add flour, salt, baking powder, vanilla & cinnamon. Mix well. Drop by 1 tbsp size scoop onto baking stoneware. Bake at 350 for 12 min. Once all cookies are cooled, fill with cream cheese whoopie pie filling - blend together cream cheese & sugar, fold in cool whip. Mix well. fill each cookie set with creamy filling. Makes approx. 34 pies.
