Fudgy Chocolate-Cherry Bites (WW)

Ingredients
1 1/4 cups sifted powdered sugar1/3 cup unsweetened cocoa1/2 teaspoon espresso powder1/8 teaspoon salt2 large egg whites1 1/2 teaspoons vanilla extract1/2 cup dried sweet cherries, coarsely chopped1/2 cup chopped pecans or walnutsCooking spray
Directions
1. Preheat oven to 300°.
2. Combine first 4 ingredients in large bowl, stirring well.
3. Add egg whites and vanilla to dry ingredients, and beat at low speed until combined. Beat at medium speed 2 minutes. Stir in cherries and nuts.
4. Spoon 1 level tablespoon batter into miniature muffin cups coated with cooking spray. Bake at 300° for 16 minutes or until puffed and crisp on top. Remove from pan; cool on a wire rack. Yield 21 cookies (serving size: 1 cookie).
Note: store in an airtight container up to 2 days.

    These came out very good. I used fresh cherries instead and left out the nuts. For the same calories I made 12 bigger versions. Great for a low cal chocolate fix. - 8/23/09
