1 2/3 cups whole wheat flour2/3 cup sugar1 tsp baking power1/2 tsp baking soda1/2 tsp ground cinnamon1/4 tsp salt1 cup mashed very ripe bananas3 egg whites1/4 cup canola oil1/4 cup fat free skim milk1 tsp vanillaTopping1 Tbsp. sugar1/8 tsp ground cinnamon
1. heat over to 375. Spray bottoms only of 12 regular-size muffin cups with cooking spray, or line with paper baking cups.
2. In large bowl, mix flour, 2/3 cup sugar, baking powder, baking soda, 1/2 teaspoon cinnamon and salt.
3. In medium bowl, beat bananas, egg whites, oil, milk, and vanilla with fork until smooth. Stir into flour mixture just until flour is moisted. Divide batter evenly among muffin cups.
4. In small bowl mix topping ingredients. Sprinkle evenly over batter in cups.
5. Bake 20 to 24 minutes or until light golden brown and toothpick inserted in center comes out clean. Immediately remove muffins from pan to cooling rack.
