mushroom and zucchini bake

Ingredients
5 large Portabella mushroom caps2-4 grated zucchini, 2 cups2 tbsp olive oil, evoo1 bag Uncle Ben's Microwaveable instant brown rice1 can black beans, rinsed and drained5 oz fresh mozzarellaGarlic to taste1 jar spaghetti sauce1 jar artichoke hearts
Directions
heat 1 tbs evoo in a large saute pan. add zucchini and garlic. saute until softened. add butter. continue sauteing until most of the moisture is absorbed. Remove from pan. add rest of oil and mushroms to pan. heat through. meanwhile, microwave rice. pour into a baking dish and mix in black beans. place the mushrooms on top of the rice and beans. top with zucchini, artichokes, a few spoonfuls of spaghetti sauce, and cheese. bake at 350 for about 20 minutes or until cheese is bubbly.
