Mini Meat Loaves

Ingredients
17 Saltine Crackers1/4 cup 1% milk2 Tablespoons Dried Parsley1 large egg1 1/2 Tablespoon Dijon Mustard1 teaspoon Onion Powder1 teaspoon Garlic Powder3/4 teaspoon Salt1/2 teaspoon Pepper1 lb ground Turkey4 Italian Style Chicken SausageGlaze:1/2 Cup Ketchup1/4 Cup brown sugar, packed4 teaspoons cider vinegar
Directions
Mix all ingredients except Ketchup, brown sugar and vinegar, together.
Make into 8 round oval meatloaves.
Brown in skill with a little oil, on both sides. Make Glaze. Put all meatloaves in 9X13 pan, cover with glaze and bake at 450-500 degrees, for 15 to 20 minutes or until internal temp is 160 degrees.
Makes about 8 mini loaves.

    I do about the same thing, except I put the meat loaves into a cupcake pan and freeze them. when frozen, I take them out of the cupcake pan, put them in freezer bags. when I want one, I just take it out and "nuke" it with a baked potatoe. Easy and nutritious! - 1/14/09
