Sweet Potato Curried Pea Soup

Ingredients
1 sweet potato (5"), chopped1 box of Low Sodium/Fat Free Chicken Broth (or vegetable stock)1 can no salt added peas, drained & rinsed1 can no salt added chick peas (garbanzo), drained & rinsed1 lg onion, chopped1 bottle of water (or tap)1/2 t. pepper1/2 t. ground ginger1 t. curry powder1/2 t. garlic powder
Directions
Put broth and water into large pot, add spices and bring to a boil. Add onion and potato, cook for 20 min. Add peas & chick peas, and cook for 20 more min or until pea-soup consistency.

Makes 6 servings of just over 1 cup.
