Awesome Low Fat Broccoli Cheese Soup

Ingredients
Bag of Frozen Broccoli florets2 cans of 98% fat free cream of celery soup1 can of 98% fat free cream of chicken soup1-2 cups of nonfat milk (add to desired thickness)8 oz of reduced fat cheddar (mild, medium, sharp, whichever you like best)Make vegetarian by using 3 cans cream of celery and no cream of chicken!
Directions
Cook broccoli to desired tenderness. This may be done in the microwave or on the stove.

While the broccoli is cooking, cut up the cheese into slices or cubes that will melt easily.

In Large saucepan, mix all 3 cans of soup with desired amount of milk. Add cheese. cook on medium low.
Stir often.

Once broccoli is cooked, you may chop it into smaller pieces by using a pastry cutter, or for finer pieces, a food processor. You may also just leave the florets whole if you would like. Then add the broccoli to the other ingredients.

Continue cooking and stirring till the cheese is melted and the soup is steaming softly.

Makes 6 1 cup servings.

    I made this according to the recipe, but added sauted onions, 1/2 skim milk and 1/2 ff chicken broth instead of just milk, shaved carrots, 1 oz velveta light cheese, and let it simmer for about 10-15 minutes. Wonderful! - 12/7/09
