Homemade Pimiento Cheese

Ingredients
Roasted red pepper (preferably fire roasted).2 cups sharp or mild cheddar cheese, finely shredded1/2-2/3 cup real mayonnaise (depending on how "wet" you like it).Paprika to taste (optional)
Directions
chop up the roasted red pepper into small pieces.
Mix all ingredients together. Can be eaten immediately, but it's better if it sits in the fridge overnight.
