Shrimp Fried Rice

Ingredients
1 cube Chicken bouillon 2.25 cup uncooked brown rice2 large AA eggs1.25 cup chopped scallions1.5 cup frozen peas & carrots0.5 lbs cooked shrimp1 tbsp minced garlic4 tbsp canola oil
Directions
In a large sauce pan bring 5 cups of water and chicken bouillon to a boil. Add rice, reduce heat and simmer for about 25-30 minutes. While rice is cooking prepare other ingredients.

In a large skillet heat oil over medium heat. Add scallions, garlic, peas, and carrots. Cook 2-3 minutes. Add shrimp. Add rice. Heat until shrimp and rice are heated. Serves 8 (1.5 cups serving)
