Mom's Homemade Pancakes

Ingredients
1 1/4 cup flour3/4 tsp salt4 tbsp sugar3 tsp baking powder2 eggs1 1/4 cup milk3 tbsp oil1 tsp vanilla1 tbsp butter, for cooking (use about a tsp at a time)
Directions
Mix dry ingredients, then combine and add wet ingredients. DO NOT OVERMIX. Add 3/4 cups berries or bananas if desired.

Important - let sit for 3 minutes before cooking! Cook over medium - low heat until you can see the holes on top of the pancakes, then flip. Makes 12 pancakces (use 1/4 cup measure)
