quinoa with black beans & spinach

Ingredients
1 cup quinoa rinsed1 14 oz can low fat/fat free chicken broth or vegetable broth1 can black beans rinsed3/4 cup fresh spinach chopped2 cloves garlic chopped1/4 cup sun dried tomatoes chopped (not packed in oil)3 green onions chopped (greens also)2 Tbs olive oilpinch of cayenne peppersalt & pepper
Directions
saute onions & garlic in olive oil on Med heat for 1-2 minutes. Add chopped spinach, chopped dried tomatoes and saute till spinach just wilts. Add chicken broth, 1/4 cup water, black beans, quinoa, pinch of cayenne pepper, salt and pepper. Bring to boil and turn the heat down to low and simmer 12-15 minutes until quinoa is fully cooked.
