Katie's Enchilada Sauce

Ingredients
2 cans tomato paste3.5 cups vegetable soup, pureed2 cloves garlic, grated (I use a microplane grater)1 tsp ground cumin1 tsp ground chipotle1 tsp ground oregano1 tsp smoked paprika1 tsp shallot salt (or onion salt, but shallot salt has a deeper flavor)1/2 tsp fresh ground black pepper
Directions
Combine all ingredients in a medium sauce pan. Bring to a boil then reduce to a simmer for about five minutes. (Watch out - it can splatter!) You can add more vegetable broth for a thinner sauce if you like. Makes approx. 8 1/2-cup servings.
