VEGAN Potatoe/Black Bean skillet

Ingredients
6 large potatoes, diced1 large onion, diced1/2 large red bell pepper, diced1/2 large yellow bell pepper, diced1/4 cup green bell pepper, diced3 tablespoons safflower oil2 cups or 1 - 15oz can black beans, drained2 cups or 1 - 15 oz can corn kernels, drainedsalt & pepper to taste
Directions
Preheat large skillet.
Meanwhile combine diced potatoes, onion, and peppers in a mixing bowl. Add safflower oil and toss to coat.
Pour into hot skillet and cook, browning potatoes until fork tender. (Keep standing there turning so your onions don't scorch)
Remove from heat and add drained corn and beans. Toss to mix and serve at once.
