Slow-Cooker Teriyaki Orange Chicken

Ingredients
16oz frozen stir-fry vegetables2 tbsp quick-cooking tapioca1 lb skinless boneless chicken breast, cut into 1-inch pieces3/4 cup chicken broth*3 tbsp orange marmalade2 tbsp teriyaki sauce*1 tsp dry mustard1/2 tsp ground ginger2 cups hot cooked rice*Use low-sodium versions to cut down on the sodium in the recipe
Directions
In a 3-1/2 or 4-quart slow cooker combine frozen vegetables and tapioca. Add chicken pieces.
In a small bowl combine chicken broth, orange marmalade, teriyaki sauce, dry mustard, and ginger. Pour over mixture in cooker.
Cover and cook on low-heat setting for 4-5 hours or on high-heat setting for 2-2.5 hours. Serve mixture with hot cooked rice.
