Easy Fried Rice

Ingredients
4 cups of cooked rice (white or brown or mixed)2 eggs2 cups of frozen mixed veggies1 tbsp soya sauce (light)2 tbsp olive oil
Directions
Cook rice in advance

2 tsbps of oil in wok or frying pan
fry rice for 5 mins stirring frequently, add frozen veggies, fry for another 5 min.

Clear a hole in center of rice mixture and add beaten eggs to center and scramble until eggs are cooked and mix egg into rice mixture.

Mix in soya sauce continue to fry until you are ready to eat.

Makes enough for 8
