Heart and Soul Blueberry Muffins

Ingredients
1/4c. brown sugar1/2+1/3 c. unsweetened applesauce1 egg1 tsp. vanilla3/4c. whole wheat flour3/4c. oats1/2 tsp. baking soda1/2 tsp. salt1 pint blueberries
Directions
Preheat oven to 375.
Mix applesauce and sugar together until sugar is dissolved. Add egg and vanilla. MIx well.
Combine flour, oats, soda, and salt together.
Add to sugar mixture in thirds. Mix just until combined-do not overmix.
Stir in blueberries.
Drop into muffin pan lined with paper cups. Batter can fill the entire cup.
Bake for 20-25 minutes.
Makes approximately 10 muffins.
