Lemon Herb & Garlic Roast Chicken

Ingredients
1 whole fryer/roaster chicken (approx. 5 lbs)8 cloves garlic, coarsely chopped1 Tbsp olive oil1/4 c. lemon juice1 Tbsp. oregano
Directions
Place bird, breast up, in 9x 13 pan (on a small rack if you have one). remove giblets from cavity and put the coarsely chopped garlic in there. pour the lemon juice as evenly as possible over the entire bird. Drizzle the olive oil evenly as well. Sprinkle oregano over top. Cover with foil and bake for approx. 2 hours. Start at 375˚. About 20 minutes before 2 hrs is up, remove foil and increase temp to 410˚.
