Chana Masala

Ingredients
2 Tbsp. olive oil1 medium onion, chopped1 garlic clove, minced1 Tbsp. curry powder3 Tbsp. tomato paste1 can chickpeas (reserve 3 Tbsp. liquid)1 Tbsp. lemon juicered pepper flakessalt and pepper
Directions
Heat oil on medium heat. Saute onions until soft.
Reduce heat. Add garlic, curry, and tomato paste.
Stir and simmer for 2 minutes.
Add chickpeas, liquid, lemon juice, salt, and pepper.
Simmer 5-6 minutes. Stir occasionally.
Add red pepper to taste. Simmer a couple of minutes longer.
Serve over brown rice.
