Sauteed Shrimp with Feta

Ingredients
1-in fresh ginger, coarsley grated2t. soy sauce lite6 oz feta, cut into 3/4 cubes1T sunflower oil2 c. cooked brown rice4T veg broth5 scallions, sliced diagonally3 c halved small mushrooms6 oz sugar snap peas, cut in half lengthwise12 raw jumbo shrimp, peeled4T chopped cilantro2T chopped parsley2T sesame seeds
Directions
Serves 4

1) Put ginger in garlic press and squeeze ginger juice into small bowl. Stir in soy sauce. Add cubes of feta and gently toss to coat. Set aside to marinade while you cook.

2) Heat oil in nonstick skillet over med-hi heat. Add scallions and mushrooms and saute 1 minute. Add peas and shrimp, stirring frequently until shrimp are cooked through (2-3 min)

3) Heat brown rice in separate sauce pan with broth, covered, until broth has evaporated.

4) Stir feta cubes into shrimp mixture and gently stir until feta is heated through (30 sec)

5) Serve rice in bowl and add shrimp mixture on top. Serve with cilantro, parsley and seeds. sprinkled on top.
