Whole-Wheat Blueberry Bran Muffins

1 egg, slightly beaten1 c. milk2 T. melted butter or applesauce3/4 c. bran1 c. whole-wheat pastry flour1/2 c. sugar1 T. baking powder1/2 t. salt1 c. fresh or frozen blueberries
Makes 12 muffins
Preheat oven to 375. Spray muffin pan. Mix egg, milk, butter and bran. Let sit for 5-10 minutes to soften bran. Whisk together the dry ingredients. Stir dry ingredients into bran mixture until just moistened. Gently fold in blueberries. Spoon into prepared muffin tins. Bake for 20 minutes.
