Pork Chops with Sweet Potatoes and Pears

Ingredients
1 TBSP Vegetable Oil1 TBSP Flour1 TSP curry powder3/4 TSP salt4 (4 oz) boneless center-cut pork loin chops1 15oz can yams in light syrup, drained1 15ox can pear slices in pear juice, drained (reserve 1/2 cup pear juice1/2 TSP dried thyme1/8 TSP ground pepper
Directions
1. In a large nonstick skilled, heat the oild. In a large sealable plastic bag, mix the flour, curry powder, and 1/4 tsp of the salt. Add the pork and shake to coat.
2. Transfer the pork to the skillet, saute until cooked through, about 3 minutes on each side.
3. Meanwhile, cut the yams into bite-sized chunks; add to the pork with the pears, reserved pear juice, thyme, pepper, and the remaining 1/2 tsp of salt. Reduce the heat and simmer covered, about 5 minutes; uncover and simmer until the pork is cooked through, about 2 minutes longer.
