1/2 lb. chicken breasts1 c. chopped onion1 t. olive oil2 cloves minced garlic6 c. low-sodium chicken stock1 c. canned navy beans, drained1/2 c. minced carrots1 c. corn1/2 c. canned, peeled tomatoes2 T. chopped basil or parsley1/2 t. ground black pepper
1. In a large saucepan over low heat, cook the chicken and onion in the oil for about 10 minutes, or until the onion is golden brown. Add the garlic and cook for 1 minute.
2. Ad the stock, beans, and carrots. Bring to a boil. Add the corn and tomatoes with juice. Cook for 15 minutes.
3. Add the basil or parsley and pepper.
Makes 4 servings.
