Chickpea Spinach Soup

2 1/4 cups cooked chickpeas2 cups of water1 tbsp olive oil4 cloves of garlic, diced1/2 a medium onion, diced2 carrots, diced1 tsp cumin seed1 tsp mustard seed1 tbsp tahini4 cups of fresh spinach
1. Warm the olive oil in a medium saucepan. Add the garlic, onion, carrot, cumin, and mustard seed and saute over medium heat for about 10 minutes.
2. Add the cooked chickpeas, 2 cups of water, and the tahini. Bring to a boil for 5 minutes. Then, cover the saucepan and cook for 15 minutes on low-medium heat.
3. Add the spinach and cook for 5 more minutes.
4. Pour the mixture into a blender or food processor to puree. If you prefer a thinner consistency, add more water.
5. Serve warm. Add salt and black and cayenne pepper as desired. Enjoy!
