Vegetable Lentil Soup

Ingredients
All vegetables are chopped. Combine (raw) and put into about 6 cups of vegetable broth.1.5 cup carrots1 cup leeks1 cup zucchini1 cup yellow squash1 cup butternut squash1 cup onions4-5 cloves garlic, diced1.5 cups of red lentils3 Tbsp of Horseradish1 Tbsp of Basil (vary upon taste)1 Tbsp of Thyme (vary upon taste)1 Tbsp of Rosemary (vary upon taste)Salt and PepperLet simmer on medium heat for about 45 minutes until all vegetables are soft. At 30 minutes, add the lentils. Let simmer for remaining 15 minutes.

Makes about 8-1.25 cup servings!
