Crunchy Salmon Sticks

Ingredients
*Whole Wheat Flour, 1 cup egg white, fresh, 3 large Kellogg's Rice Krispies Cereal, 1 cupKellogg's Corn Flakes Cereal, .5 cup light Parmesan Cheese, grated, .3 cup Pepper, black, fresh cracked 1 tsp Pink Salmon (fish), 18 oz Olive Oil, 1 tbsp for drizzling*Canola Oil, 1 tsp spray on baking sheet
Directions
Pre Heat oven to 450 F
Rinse the slamon fillet and pat dry with paper towels. Slice the fillets into 1/2 inch pieces by about 4 inches long.
Place flour in a shallow dish and mix with pepper.
In another bowl place egg white and beat until frothy (30 sec). In a 3rd dish combine crushed rice krispies, and corn flakes (Can pluse in blender for a few seconds) with the parmesan cheese.
Coat the salmon 1st in flour, then, egg mixture, then in Parmesan mixture and place on baking sheet sprayed with canola oil. Continue until all salmon pieces are coated. Lightly drizzle olive oil (or spray tops with canola) over the fish and place in oven for about 15 - 20 min
Dipping Ideas: Mayo/yogurt combo,
mustard, marinara sauce, pesto, vinaigrette, or even ketchup!

    This was fabulous. Like a really healthy, crunchy fish stick. I might have added a little salt. I didn't use fresh parmesan cheese and that might have made a difference. Very good. - 2/26/09
