6 large green bell peppers1.10 pds. 93% lean ground beef1 14.5 ounce can Hunt's diced tomatoes (flavored)1 14.5 ounce can Southwestern tomatoes1/2 cup white Minute rice1/2 cup water1 cup chopped onion1/2 tbsp. oregano1/2 tbsp. basil1 tbsp. chopped garlic1/4-1/3 jar spaghetti sauce1 cup Pizza cheese
Cut off the tops of each green pepper and remove seeds and pulp. Boil the green peppers for 5 minutes to soften. Preheat oven to 325 degrees. Brown ground beef, onion, basil, oregano, and garlic in a skillet (you may add less or more of the seasonings depending on your preference). Add rice, water, and both cans of tomatoes. Cook until rice is tender. Place green peppers in a casserole dish and fill each pepper with the meat mixture. Top peppers with spaghetti sauce and cheese. Place in oven for 20 minutes or until hot. Makes 6 servings.
